How long have you been a chef?
I grew up working in restaurants. So for the past 12 years I have had my hand in making food for others and filling their hearts and stomachs.
One of your favorite things to cook?
There is not just one thing that I like to cook over others. I look at different styles, but if I had to pick something I would have to choose between making shepherd's pie or brewing my own beer. There is nothing better to complement a meal than a handcrafted ale!
Most popular dish in your restaurant?
Hands down it has to be our pizzas. We have the best pizza in the area, made-from-scratch ingredients that blow the rest out of the water.
Unusual ingredients that you like to use?
I love using pink salt and cayenne pepper. It gives the food a nice salty taste that is not overwhelming and a nice little kick.
Something a home cook should know?
Emotions show in your food. If you are mad or sad, people can taste the saltiness in the food. If you are happy, they can feel the joy that went into it.
Any contests or awards you or the restaurant has earned?
We have won an award for our chili at the Humble Chili Cook-off. It is fantastic, and I highly recommend you come and try it before it is gone, as the season for chili is at its end.
Do you do the cooking at home?
When I have the night off I happily do all the cooking.
