Santiago and Febe Jimenez

The Pink Shrimp Café recently opened in 2019 and is located in Atascocita. Owner Santiago Jimenez, and his wife, Febe, are Houston locals and share four children ages 19, 16, 14 and 12. 

“I have been in the restaurant business my entire life, starting my career off as a table busser, waiting tables, bartending, etc. I progressively grew in the industry and eventually got to the point where I wanted to open my own restaurant,” said Jimenez. 

“I am extremely familiar with seafood; my specialties include fried seafood, Gulf Coast shrimp, etc. I love playing with grilled and blackened fish, all of which pushed me to open my own seafood restaurant,” added Jimenez. 

Jimenez explained that his favorite thing about being a new restaurant owner is that if he sees something that is wrong, he fixes it immediately. He loves feedback and input from customers and added that a routine part of his job includes getting customer feedback about the quality of the food and adjusting according to their preferences. “We value customer input, because at the end of the day, they are the ones making the restaurant possible,” he said.

Jimenez explained the impact of COVID-19 on his restaurant. “We opened in November of 2019, and it took us a few months to develop a footprint in the community, but COVID-19 denied us a chance to fully grow. I want to expand within this restaurant before I expand to other locations in the future,” added Jimenez. 

He explained that COVID-19 resulted in some layoffs and it was a daunting task to stay afloat. Jimenez himself is heavily involved in the restaurant; he is the head chef and takes on the responsibilities of closing, opening, bookkeeping, etc. Truly, the restaurant is his brainchild and he ensures its continued success.

Jimenez recommends a first-time customer order the Pink Mahi Tacos, which he considers to be his signature dish. He also recommends ordering his fried food. He added that he makes all of the food from scratch himself, there is no pre-made or pre-packaged food. Jimenez wants his customers to truly enjoy the quality of a scratch-made, wholesome seafood meal. 

“First time customers will be surprised by the quality of the food that we are serving here. Whenever one comes in, he will get good, honest service, great tasting food and I will make sure to check in and greet the customer after the meal. Few owners or head chefs will ever have such interpersonal interactions with their customers,” concluded Jimenez.

Our family loves going to Pink Shrimp! Everything we have had so far has been wonderful! The owner always comes by to check on his customers and makes you feel like a personal friend.
