RC’s NYC Pizza & Pasta is living proof that hard work and pouring into your business always pays off. RC Gallegos, owner and proprietor of RC’s, strives to prove to Houston and surrounding communities that his restaurants are second to none by claiming to offer the best pizza and pasta in the city. Together with the help of his family, and employees at your service, they continue to win at competitions at the national level and are a local favorite, too.
RC’s competed at the 2017 USA Caputo Cup competition against many of the top pizzaiuolos, or pizza chefs, from all around the country in the prestigious, inaugural gluten-free category. In this event, they proudly brought home the third place bronze medal.
“As the only pizzaiuolo from the Houston area in the competition, our team brought to the table the California Pizza, featuring baby spinach, zesty Italian sausage, artichoke hearts, roasted peppers and fresh basil over traditional pizza sauce and 100 percent whole milk mozzarella on a healthy and delicious gluten-free crust,” said Gallegos.
“I really enjoyed competing and representing the city of Houston and the fine state of Texas at this and other national-level events. My son, Kennedy Gallegos, and I have had the opportunity to bond as father and son at several of these competitions, too.”
Additionally, RC’s scored second for the silver medal in the Northeast Pasta Showdown, sponsored by Barilla. In this competition, this team first presented the signature pasta Sugo alla Bolognese (pork cooked in white wine, beef cooked in red wine, port mushroom caps, ricotta and fresh basil covering fettuccine pasta), and then prepared a pasta dish based on rigorous competition requirements. The dishes were judged on trueness to Italian authenticity, presentation, flavor, balance, and finally, delectable taste.
Team Gallegos has been competing at national pizza competitions since 2009, where his team was awarded first place and earned the gold medal at the Pizza Expo in Las Vegas for their classic plain cheese pie. The category in which they competed is most often coveted and dominated by New York City pizzerias.
Gallegos said, “It was the first time a plain cheese pizza had been entered into the competition. We came in and grabbed the win to everyone’s surprise. I am constantly made proud of how well my two chefs perform each and every time. Chef Lee White and Chef Ryan Klen ‘kill it’ with pasta dishes and more on a regular and consistent basis. As a result of the win, we had to wait a few years to compete in this same competition.”
Gallegos continues to work and rework his recipes, not just for the competitions in which he succeeds, but for the local customer base as well. Aside from the many trophies he and his team have brought home, be credits his success to both his team for their dedication and his wife for her support.
“Thanks be to God for my loving, supportive wife, Arely Gallegos, who supports me and helps me with preparations and development of the award-winning products we present. She makes it so that we never have to design a dish solely for a competition, as we only compete with dishes that are already local favorites served in our kitchens,” he said.
